Banana Oatmeal Pancake Recipe
Ingredients:
- 1 ripe banana
- 1/2 cup rolled oats
- 1/4 cup of milk of your choice
- 1 egg
- 1/4 tsp baking powder
- Pinch of salt
- Optional: 1 tsp vanilla extract, 1 tbsp sweetener of your choice, 1/4 cup of any chopped nuts, berries, or chocolate chips
Instructions:
- In a medium mixing bowl, mash the ripe banana with a fork until smooth.
- Add the rolled oats, milk, egg, baking powder, and salt (and any optional ingredients if using) to the bowl and mix until well combined.
- Heat a non-stick pan or griddle over medium heat.
- Using a ladle or measuring cup, pour the batter onto the pan and cook the pancake for 2-3 minutes on one side or until small bubbles appear on the surface.
- Carefully flip the pancake and cook for another 1-2 minutes on the other side.
- Repeat the process until all the batter is used up.
- Serve the pancakes warm with your favorite toppings, such as butter, syrup, or peanut butter.
