Avocado Breakfast Burrito Recipe

Ingredients:

ripe avocado
- 4
flour tortillas
- 4 eggs,
scrambled
- 1/2
cup of black beans, rinsed and drained
- 1/2
cup of shredded cheese
- 1/4
cup of salsa
- Salt
and pepper to taste

- Chopped

Instructions:
- Cut
the avocado in half, remove the pit, and scoop out the avocado flesh into
a small bowl. Mash it with a fork or a potato masher.
- Season
the mashed avocado with salt and pepper to taste.
- Heat
a large skillet over medium heat. Add the scrambled eggs and cook until
set.
- Warm
up the tortillas in the microwave or in a skillet.
- Spread
the mashed avocado on each tortilla, then add the scrambled eggs, black
beans, cheese, and salsa.
- Roll
the tortillas tightly to form the burritos.
- Serve
the burritos with your toppings of choice, such as sour cream, cilantro,
