Avocado Breakfast Burrito Recipe


Ingredients:

  • 1 ripe avocado
  • 4 flour tortillas
  • 4 eggs, scrambled
  • 1/2 cup of black beans, rinsed and drained
  • 1/2 cup of shredded cheese
  • 1/4 cup of salsa
  • Salt and pepper to taste
  • Optional toppings:
  • Sour cream
  • Chopped cilantro
  • Chopped tomatoes

Instructions:

  1. Cut the avocado in half, remove the pit, and scoop out the avocado flesh into a small bowl. Mash it with a fork or a potato masher.
  2. Season the mashed avocado with salt and pepper to taste.
  3. Heat a large skillet over medium heat. Add the scrambled eggs and cook until set.
  4. Warm up the tortillas in the microwave or in a skillet.
  5. Spread the mashed avocado on each tortilla, then add the scrambled eggs, black beans, cheese, and salsa.
  6. Roll the tortillas tightly to form the burritos.
